Ham and cheddar panini

Serves 2

2 pieces of baguette cut 5-6 inches long, or 2 of your favorite rolls

2 tablespoons canna- (olive) oil

½ cup peppers, as spicy as you like, sliced into rounds

4 ounces cheddar, sliced

2 ounces ham, thinly sliced

Some arugula

1 tomato, thinly sliced

½ cup sauerkraut, drained

Directions

1. Heat the panini press or non-stick skillet. If you are going to use a skillet, have a plate or something heavy to press the sandwich down.

2. In a small skillet, heat the canna-olive oil and sauté the peppers. Set aside.

3. Layer the sandwiches with the ham, arugula and tomato. Top with the cheese, peppers and sauerkraut.

4. Grill until the cheese is melted and the bread is golden brown. Serve while warm so the cheese is all melty and beautiful.
