INGREDIENTS:

  • 20 ounces of chopped, cooked broccoli
  • 1 cup mayonnaise
  • 1 can condensed cream of mushroom soup
  • 1 cup sharp cheddar cheese (grated)
  • 2 eggs (beaten)
  • 2 cups crushed crackers (i.e. Ritz)
  • 4 tablespoons cannabis-infused butter

PREPARATIONS:

To begin, preheat an oven to 350 degrees Fahrenheit.

Next, chop the broccoli into bite size pieces, discarding any large ends of the stems.

Then, both cook and blanch the broccoli. First, boil a large pot of water and cook the broccoli for 10 minutes. As the broccoli is cooking, prepare a large bowl with cold water and ice cubes.

After 10 minutes has passed, remove the broccoli from the boiling, hot water, and then proceed to dump it into the large bowl of ice water. The blanching of the broccoli will halt the continuation of the cooking process – the broccoli should have a little crunch in the casserole!

After 2-3 minutes, remove the broccoli from the ice water and lay it out on a paper towel to dry.Next, in a large bowl, combine the blanched broccoli, 1 cup of mayonnaise, 1 can of condensed mushroom soup, 1 cup grated sharp cheddar cheese, and 2 lightly beaten eggs. Stir well to combine all of the ingredients.

After, prep the casserole dish/baking pan with a spritz of some nonstick cooking spray.

Next, take the crackers and place them in a large ziploc bag. Seal the bag tight and then crush the crackers by smacking the bag with a wooden spoon or ladle until you are left with roughly 2 cups of crushed crackers.

After 2-3 minutes, remove the broccoli from the ice water and lay it out on a paper towel to dry.

Then, proceed to pour the broccoli casserole mixture into the prepped dish, and then top it with the 2 cups of crushed buttery crackers.

Melt the 4 tablespoons of cannabis-infused butter either over low heat in a small sauce pan, or for 1-2 minutes in the microwave.

Then, pour the melted cannabutter over the casserole, trying to evenly cover the cracker crust.

Bake for 35 minutes

Place the broccoli casserole into the preheated oven and bake for 35 minutes, or until it has developed a nice golden-brown color.

Remove the broccoli cheddar casserole from the oven and allow it to stand for 5 minutes before serving.
